Slow cooker Loaded potato soup

How about this hearty potato soup to warm up a cool day! This soup is loaded with everything you would put on a baked potato (plus a few extras). You wouldn't think something this delicious could be easy, but it sure is when you use your slow cooker!


What you will need:

6 slices of crumbled bacon (cooked)

1/2 cup of chopped onions

6 medium potatoes

1 10 oz package of frozen corn

1 small can of evaporated milk

1/2 stick of butter

1/2 can of sour cream


Directions:

Peel and dice the potatoes, then place them in a pan with just enough water to cover the potatoes. Put salt and pepper in with the potatoes to your taste. Boil until the potatoes are tender. Put everything into the slow cooker and cook low for 4 hours. Stove Top: After you boil the potatoes, then add corn, evaporated milk and butter, do not boil. Heat until corn is done.


Suggestions:

keep leftovers in the refrigerator, it keeps great and works as a quick snack or meal. If your busy, you can put it on in the early and keep it in the refrigerator, then reheat for an easy meal.
