Pumpkin roll can be a bit tricky to make but it is worth a try. This delicious dessert is sure to impress your guest, and look gorgeous on your thanksgiving dinner table.


What you will need:

For the cake:

1 cup sugar

1 teaspoon baking soda

3/4 cups of baking mix (for biscuits, pancakes etc.)

2/3 cups of pure pumpkin

1/2 teaspoon of cinnamon

1 teaspoon of pumpkin pie spice

3 eggs

For the filling:

8 oz of cream cheese softened

1 tablespoon of vanilla

1 cup of powdered sugar

2 tablespoons of butter


Directions:

Mix cake ingredients until well combined. Place wax paper on a cookie sheet and grease it with butter. Then pour cake mix on greased wax paper, spread evenly. Bake at 350 for 15 minutes. While cake is baking mix filling by placing all ingredients for filling into a bowl and blend until completely smooth. When cake is baked, take out of the oven and sprinkle a good amount of powdered sugar over top of cake. Now place a clean kitchen towel on the cake, then place another cookie sheet over towel and flip cake. Remove the pan and wax paper from bottom of the cake. Now gently roll into a jelly roll with the towel (wrapping the towel inside as if it where part of the roll) and let cool for 10 minutes. After cooling for 10 minutes gently unroll and spread icing in the middle, spreading evenly and covering the whole bottom of the cake (this will be the inside when you roll it up). Now roll (just the cake this time) back up into a jelly roll and refrigerate for at least an hour. Then slice and enjoy.
